Easy one pot chicken

When life gets busy, and you’re in need of a quick and effortless dinner option, this roast chicken recipe is your go-to solution! It’s a complete meal in one pot, combining protein, carbohydrates, and fibre, delivering essential nutrients for a nourishing dinner.

INGREDIENTS: 
Chicken quarters  
Peppers/fennel/courgettes/tomatoes
1 Spanish onion, sliced
1 russet potato, cubed
1 tbsp red wine vinegar  
Zataar/sumac/garlic powder/onion powder/shawarma spice

METHOD: 
1. Preheat the oven to 180C/350F.
2. Add the vegetables, onions and potatoes to a cast iron, like a Le Creuset.
3. Add in the bone-in chicken.
4. Add the red wine vinegar and any spices!
5. Add salt and pepper, cook 1.5 hours covered and uncover for the last 30 mins to brown.
