Here is a deliciously satisfying poke bowl that combines marinated fish, vibrant veggies, and delicious flavours, leaving you with a wholesome dinner.
INGREDIENTS:
2 tbsp edamame beans
200g sushi-grade salmon
25g raw brown rice noodles
Cucumber, julienned
Bok Choi, sliced
1 tbsp tamari
1 tsp sesame oil
Ginger, grated
1 tsp mirin
Salt
Pepper
1 tbsp lime juice
Sesame seeds
METHOD:
1. Cube the salmon.
2. Boil the edamame and drain.
3. Boil the noodles and drain.
4. In a separate bowl, add the cucumber, and toss with mirin, lime juice, sesame oil, ginger and salt.
5. Saute bok choi with sesame oil and mirin for 5 minutes, till cooked.
6. Assemble everything in a bowl and top with sesame seeds.
