Poke Bowl

Here is a deliciously satisfying poke bowl that combines marinated fish, vibrant veggies, and delicious flavours, leaving you with a wholesome dinner.

INGREDIENTS:
2 tbsp edamame beans ⁠⁠
200g sushi-grade salmon ⁠⁠
25g raw brown rice noodles⁠⁠
Cucumber, julienned⁠⁠
Bok Choi, sliced ⁠⁠
1 tbsp tamari ⁠⁠
1 tsp sesame oil ⁠⁠
Ginger, grated⁠⁠
1 tsp mirin ⁠⁠
Salt ⁠⁠
Pepper ⁠⁠
1 tbsp lime juice ⁠⁠
Sesame seeds ⁠⁠
⁠⁠
METHOD: ⁠⁠
1. Cube the salmon.
2. Boil the edamame and drain. ⁠⁠
3. Boil the noodles and drain.
4. In a separate bowl, add the cucumber, and toss with mirin, lime juice, sesame oil, ginger and salt. ⁠⁠
5. Saute bok choi with sesame oil and mirin for 5 minutes, till cooked. ⁠⁠
6. Assemble everything in a bowl ⁠and top with sesame seeds.⁠⁠
