Shakshuka

I love shakshuka as it’s such a filling and nourishing breakfast/lunch/dinner! It is also a great source of an overlooked nutrient, choline, which is a vital nutrient that supports brain health, metabolism, and proper nerve function.

INGREDIENTS:⁠⁠
1 small onion, sliced ⁠⁠
1 garlic clove, crushed ⁠⁠
1 tsp avocado oil ⁠⁠
1 red pepper, sliced ⁠⁠
1 tbsp tomato purée⁠⁠
1/2 tsp Himalayan salt⁠⁠
1/2 tsp black pepper ⁠
1/2 tsp garlic powder
1/2 tsp onion powder ⁠⁠
1/2 tsp paprika ⁠⁠
1/2 tsp cumin
1/2 tsp sumac
1/2 tin chopped tomatoes ⁠⁠
Handful of spinach ⁠⁠
2 eggs ⁠⁠

METHOD: ⁠⁠
1. Sauté onions and garlic in avocado oil till they are light brown.⁠⁠
2. Add sliced peppers and mix. Sauté on a low flame for 20 minutes.
3. Add tomato purée, salt, pepper and spices.⁠⁠
4. Add chopped tomatoes and a handful of spinach.⁠⁠
5. Make 2 wells and add in the eggs.⁠
6. Cover and cook on a low flame for 6-8 minutes until the eggs are set.
