Cauliflower Crust Pizza Two Ways

Pizza can be part of a healthy diet when you make smart choices. This cauliflower crust pizza is versatile and nutritious, offering a lower-carb base packed with flavor. Whether you prefer it topped with fresh veggies or a mix of cheeses, it’s a delicious way to enjoy pizza night without the guilt.

INGREDIENTS (For the Homemade Cauliflower Crust):
1 medium head of cauliflower, riced (about 4 cups)
1/2 cup part-skim mozzarella cheese, shredded
1/4 cup grated Parmesan cheese
1 large egg
1 tsp dried oregano
1/2 tsp garlic powder
1/4 tsp salt

OR 1 store-bought cauliflower pizza crust (aim for around 180-200 calories per crust)

INGREDIENTS (For the Pizza Toppings – both options):
1/2 cup marinara sauce (preferably low-sodium)
1/2 cup part-skim mozzarella cheese, shredded
1/4 cup crumbled feta cheese
1/4 cup bell peppers, sliced
1/4 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
Fresh basil leaves, for garnish
1/4 tsp dried oregano
1/4 tsp garlic powder
Olive oil spray

METHOD:

1. Option 1: Making the Crust:

  • Preheat your oven to 425°F (220°C). Line a baking sheet or pizza stone with parchment paper.
    Rice the cauliflower using a food processor, grater, or by finely chopping. Microwave the riced cauliflower for about 5-8 minutes until softened. Let it cool slightly, then place it in a clean kitchen towel and squeeze out as much moisture as possible.
  • In a large bowl, combine the cooked cauliflower, 1/2 cup mozzarella cheese, Parmesan cheese, egg, oregano, garlic powder, and salt. Mix until well combined. Transfer the mixture to the prepared baking sheet and press it into a pizza crust shape, about 1/4 inch thick.
  • Bake the crust in the preheated oven for 20-25 minutes, or until it is golden brown and firm.

2. Option 2: Using a Store-Bought Crust:

  • Preheat your oven according to the instructions on the cauliflower crust packaging (usually around 425°F or 220°C). Lightly spray the store-bought cauliflower crust with olive oil and place it on a baking sheet or pizza stone.

3. Assemble the Pizza:

  • Spread the marinara sauce evenly over the baked (or store-bought) crust.
    Sprinkle 1/2 cup of mozzarella cheese and the crumbled feta cheese over the sauce.
  • Add the sliced bell peppers, cherry tomatoes, and red onion.
  • Sprinkle dried oregano and garlic powder over the toppings.

4. Return the pizza to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.

5. Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves before slicing and serving.
