INGREDIENTS
6 large eggs
1/2 cup egg whites
1/2 cup low-fat cottage cheese
1/2 cup shredded low-fat mozzarella cheese
1 cup fresh spinach, chopped
1/2 cup cherry tomatoes, halved
1/4 cup finely chopped red onion
1 clove garlic, minced
1/2 tbsp olive oil
Salt and pepper to taste
METHOD
1. Preheat your oven to 375°F (190°C).
2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped red onion and garlic, and sauté until the onion is translucent, about 3-4 minutes. Add the chopped spinach and cherry tomatoes, and cook until the spinach is wilted, about 2-3 minutes.
3. In a large bowl, whisk together the eggs, egg whites, cottage cheese, and half of the shredded mozzarella cheese. Season with salt and pepper to taste.
4. Pour the egg mixture over the sautéed vegetables in the skillet. Gently stir to combine the ingredients evenly. Sprinkle the remaining mozzarella cheese on top.
5. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set in the center and lightly golden on top.
6. Let the frittata cool for a few minutes before slicing into 4 equal portions. Serve warm.
