Healthy Salmon Burgers

These salmon burgers are packed with protein and omega-3 fatty acids, making them a delicious and heart-healthy meal. Serve them on a bed of greens with avocado or a light yogurt-dill sauce for added flavor and nutrition. Remember, healthy eating is about balance and enjoyment, not restriction.

INGREDIENTS
1 lb (450g) fresh salmon fillets, skin removed
1 large egg
1/4 cup finely chopped red onion
2 tbsp chopped fresh parsley
1 tbsp Dijon mustard
1 tbsp fresh lemon juice
1 clove garlic, minced
1/4 cup almond flour
1/2 tsp salt
1/4 tsp black pepper
Olive oil spray (for cooking)

METHOD
1. Cut the salmon fillets into chunks and place them in a food processor. Pulse until the salmon is finely chopped but not pureed.
2. Transfer the chopped salmon to a large bowl. Add the egg, red onion, parsley, Dijon mustard, lemon juice, garlic, almond flour, salt, and pepper. Mix until well combined.
3. Divide the mixture into 4 equal portions and shape them into patties.
4. Heat a non-stick skillet over medium-high heat and lightly spray with olive oil. Cook the salmon patties for about 3-4 minutes on each side, or until golden brown and cooked through.
5. Serve the salmon burgers on a bed of greens, with a side of sliced avocado or a light yogurt-dill sauce for added flavor.
