Indulge in the warmth and comfort of a wholesome ramen bowl, packed with fibre, nutrients, and protein. This satisfying meal option is the perfect alternative to takeout, providing a nourishing and flavorful experience for any occasion.
INGREDIENTS:
1 tbsp sesame oil
1 knob ginger
1 clove garlic
1 handful dried porcini mushrooms
4tbsp tamari
4tbsp apple cider vinegar
2 tsp mirin
1 tsp wasabi powder
1 tbsp coconut aminos
1 packet of watercress
1 lemongrass
Bok choy, cut
12 baby corns, sliced
Handful of sugar snap peas, sliced
Exotic mushrooms
Brown rice noodles
Raw edamame beans
3 eggs
METHOD:
1. Heat the sesame oil and sauté the ginger garlic.
2. Add 2 litres of cold water, dried Porcini mushrooms, tamari, apple cider vinegar, mirin, wasabi powder, coconut aminos and watercress lemongrass sliced lengthwise.
3. Bring to a boil and then simmer for 30 mins.
4. Drain the veggies and discard so the broth is clear.
5. Add cut bok choy cut, sliced baby corn, sliced sugar snap peas and exotic mushrooms.
6. Boil brown rice noodles with edamame, drain and add to the broth.
7. Simmer for another 5 mins.
8. Boil the eggs till medium, peel and marinate in tamari.
9. Then serve the broth, add a sliced egg and garnish with lime and coriander.
