Relive the cherished childhood memories of fluffy pancakes with a nutritious twist. These pancakes are a healthier version, fueling your body with better ingredients while still indulging in that classic pancake taste.
INGREDIENTS:
1/2 cup almond meal
1 tbsp coconut flour
1tsp baking powder
Pinch of Himalayan pink salt
1tsp maple syrup (add more if you like things very sweet)
1/4 cup almond milk
METHOD:
1. Add all the ingredients to a blender and blend until smooth. The batter must be VERY thick, so you may need to add more almond meal.
2. Heat a frying pan (medium heat) with oil and spoon 2 tbsp of the pancake batter. (I used a large frying pan so I could make about 4-5 at the same time).
3. Flip once brown. Let the other side cook.
4. Pile up on a plate with all your favourite toppings.
